Turkey Taco Meatloaf

I finally got to cook last night! WHOOHOO! Sean came over and I made quite the feast.

This recipe is from a Hungry Girl book, but I did tweak it some.

Turkey Taco Meatloaf

    1 pound raw extra-lean ground turkey (I used extra lean ground beef)
    2 slices of fat-free cheddar cheese (I used Reduced Fat Pepper jack cheese_
    1/2 cup shredded fat-free cheddar cheese (again, I used reduced fat. Fat Free Sucks)
    1/2 cup canned sweet corn kernels
    1/4 cup chopped green bell peppers
    1/4 cup chopped onions
    1/2 cup salsa
    1/2 packet of taco seasoning mix, dry (I used the whole packet)
    Preheat oven to 375 degrees

    Cook peppers and onions for three minutes over medium heat in a pan sprayed with non-stick spray

    In a large bowl, combine onions and peppers with turkey, corn and seasoning mix. Spread half of the mixture evenly into the bottom of the loaf pan (about 9″x5″) sprayed with nonstick spray.

    Layer the two slices of fat-free cheese on top of the mixture (try to keep slices away from the pan’s edges). Evenly top with the remaining meat mixture.

    Pour the salsa over the top of the loaf. Cook in the oven for 30 minutes.

    Top loaf with shredded cheese. Return loaf to the oven and cook for another 15 minutes.

    Number of Servings: 6

It turned out super tasty! Instead of turkey, I used extra lean ground beef bc thats what I had on hand. I also cut out the onions/green peppers because Sean doesn’t like them. If it were me,  I would’ve added tons.

I also made a new product for the sides. I saw this in the freezer section for the first time and I thought it’d go perfect with the taco meatloaf.
All in all, it was a great and easy meal! I would suggest this recipe to anyone–especially you ladies with picky husbands or S.O!

Oh that’s fantastic! I’ve also been known to use taco seasoning in alot of other things… because I like the little extra kick it has!

I have been wondering if those Alexia new frozen sides were any good or not- I LOVE the sweet potato fries that they have, but wasn’t sure about the new stuff. Looks like I’ll have to give it a try :)

Recipe looks delish – unfortunately my picky hubs hates the taste of chili powder, so taco anything is out! Those Alexia sweet potatoes look yummy, I’m gonna have to check those out.

Mmm I’m going to HAVE to try this recipe with some of my fake meat. It looks delicious. My Man is the PICKIEST so this will be good for him too. I’ll just have to fool him into thinking I used real meat.

Speaking of guys, it’s SO funny the things you fight about once your roomies. We also fight about disciplining the dog!

I’ve made that HG meatloaf before and didn’t like it, but I know why. I used fat free cheese. Some people like it and that’s fine, but I just can’t get myself to like it. I will have to give this recipe another try and use RF cheese like you did next time!!

That meatloaf looks awesome! I actually hated meatloaf growing up, but I realized that it was just because of the way my mom made it. haha. So I found my own recipe and have liked it ever since. I will definitely give yours a try. Have a great Saturday girl!

Fat free DOES suck! It just doesn’t melt! Or taste like cheese…. but yet I continue eating it…. think I’m going to tweak some of my recipes to allow for some RF – it melts/tastes so much better!!

That recipes looks good! Sometimes the Hungry Girl recipes are a little too artificial for my liking- lots of splenda and sugar free this or that. But that actually looks like real food. And good food! Hope you’re having a great weekend

Mmmmm… Everything about that meal looks super fantastic! I would have never thought of chipotle and sweet potatoes, that sounds really interesting.

Meat + Cheese + Salsa. What else does a girl need? I love that you skipped the nonfat cheese and went for the beef. Definitely the way to a man’s heart ;) I’ve tried Alexia potatoes before and they’re pretty good. That side looks even better :)
