One of my favorite things about my kitchen is I am actually feeling inspired to COOK. My old kitchen was small and cramped and this is the exact opposite. I have ROOM and with room comes urge.
I have had this recipe bookmarked for a LONG time ever since I saw it on Kelly’s blog. I mean, it’s meatloaf, c’mon! Meatloaf is always good.
I used to think meatloaf was the most disgusting thing ever when I was a kid. I mean, a loaf of meat sounds pretty sick. Plus, my mom always put ketchup on meatloaf and I have a strict ketchup with food rule. I only use ketchup with french fries and chicken strips. No ifs, ands, or butts. I think ketchup is absolutely disgusting on anything else.
Because of that, I never thought to make meatloaf. And then I came across this Turkey Taco Meatloaf recipe and I was a meatloaf fan after all.
The thought of regular ole homestyle meatloaf doesn’t interest me, so my taste buds perked when I read Kelly’s recipe.
Pineapple Meatloaf
- 1 egg, beaten
- 1/4 cup steel-cut oats (or 1/2 cup regular oats)
- 1/2 onion, finely chopped (I didn’t include the onions or peppers b/c Sean isn’t a fan of either)
- 1/2 red bell pepper (or any color of your choice)
- 1/4 teaspoon salt
- 1 pound lean ground beef
- 8 ounces crushed pineapple, drained
- BBQ sauce
- Combine egg, oats, onion, bell pepper and salt.
- Add beef and pineapple. Mix well.
- Place in a 8 x 8 baking dish and bake uncovered at 350 degrees for 35 to 40 minutes or until meat is no longer pink.
- Top with BBQ sauce and bake for another 3 minutes.
I was also excited to use this recipe because I just got some new barbecue sauce in the mail from Stubb’s BBQ. The great people at Stubb’s came across my glowing review of the Subway Hickory BBQ Chicken Sandwich (which has Stubbs BBQ on it) and wanted to send me a thank you package for my good review. Isn’t the blog world great?!
I figured the sweet taste of the Hickory Sauce would go perfect with my pineapple meatloaf.

I’m thinking that using turkey burger would be pretty fab as well! Although anything topped with BBQ is pretty damn good!
Meat loaf is one of my favorite foods my husband was actually just whining tonight about how I haven’t made it in a while! I think I will be trying this one next time I do!

That Meatloaf looks fantastic. Where was the water at and did you have to give him a bath after that. He probably loved cooling off.

That meatloaf recipe looks yummy! I bet it would work with some TVP in place of the meat (for vegetarians like myself).
I took a really long time to warm up to meatloaf. Because you’re right- a loaf of meat never sounds good… I’ve never made it myself- but am happy whenever my mom serves it at home!

Ditto on the ketchup factor. It only goes on burgers and hot dogs, and even that is rarely.

I’ve made the taco meatloaf and loved. I’ve had the pineapple meatloaf recipe printed for ages – I need to break it out and just make the dang thing, especially now that you raved about it!
Those BBQ sauces sound great, and I love meatloaf, so combined they sound perfect!

Surprisingly, I have never been turned off my meatloaf…LOL, ugh. Well, maybe today I would be, but when I was younger I was not!
Yeah, I did it without the peppers and onions. I think it wouldve been GREAT with them, but Sean doesnt like either so I left them out!

Stubbs rocks and if you are ever in the area, you gotta go to the restaurant. They have a fantastic Sunday brunch complete with bbq, grits, biscuits, the works Southern-style.
I have to say, I still haven’t tried meatloaf since I’ve “grown up” because I had an aversion to it as a kid! I’m determined to try it now!
Also, I used Stubbs barbeque last night for a chicken sandwich. Love it!

I am going to attempt your HIIT workout. Do you print that out and bring it to the gym? Do you find it hard/annoying having to manually adjust the incline/speed or do you use manual setting?

I usually just make up the workouts as I go so I don’t bring anything and then I just remember and type them out. But yes, I have printed it out and brought it to the gym…and I use the manual setting and then adjust the speed/incline etc when needed. It’s not too bad!

I can totally understand the inspired cooking! I think once i have my own kitchen i will feel that way too! PLUS i will have loads of fridge space so i can actually MAKE meals and have left overs!

Stubbs is the best—I love the variety of their sauces!
Oh how I love Stubbs BBQ!!! The flavor is so good without it being too thick or sweet. I like the spicy version, which I don’t see included in your care package. If you like spicy BBQ sauce, then I highly recommend it. Great on the calorie count too. My favorite use for it? Baked potato + turkey smoked sausage chopped and sauteed + Stubbs spicy sauce + cheddar = stuffed potato euphoria!
