Zucchini & Squash Chips

I have a headache. Just thought I would throw that out there.

I went to the eye doctor today. It’s been about three years since I had gone and it’s time for new glasses and contacts so I had to go.

Getting dilated sucks. It gives you headaches and makes you see funny. I’m still a little bitter that I had to go through that.

My eyes got worse–yet again. I’ve worn glasses and contacts since 5th grade and every time I get my eyes checked they get worse.

I feel like I am practically blind now. When I take my contacts off, I can’t see a darn thing. People’s face become dark blogs and I can’t even tell if you are male or female. It’s bad.

Ah, well. Just more cute glasses right?

Anyways, enough bitching and onto to my yummy dinner.

I kept it simple with a turkey burger with spinach on top…

My side dish however was dashing…in fact, it was courtesy of Miss Dashing Dish! (Corny, I know. Blame it on the headache). She’s amazing and has about a million delicious recipes that you have to try!

Zucchini and Squash Chips

Ingredients:

  • 2 large zucchini, sliced into 1/4 inch disks (I used 1 zucchini and 1 squash)
  • 1/4  cup  dry breadcrumbs (I like Panko, but you could make your own ‘fiber one’ breadcrumbs or use whatever type of bread crumbs you like)
  • 1/4  cup grated fresh Parmesan cheese (or grated asiago cheese)
  • 2 egg whites
  • 1/4  teaspoon  seasoned salt
  • 1/4  teaspoon  garlic powder
  • 1/8  teaspoon  freshly ground black pepper
  • *Optional season variations: 1/4 teaspoon of any of the following: dried onion powder, oregano, Mrs.Dash seasoning, Cajun seasoning, Stevia, parsley, or basil (I used cajun seasoning)

Method:

  1. Preheat oven to 450 degrees. Line baking sheet with parchment paper (or foil will work, but parchment paper works best), and spray with non-stick cooking spray.
  2. Wash zucchini and slice into 1/4 inch slices.
  3. Mix the bread crumbs, Parmesan and seasoning in one bowl.  Place the egg whites in another bowl.
  4. Dip zucchini slices in the egg whites, followed by the breadcrumb mixture, coating them evenly.
  5. Spread zucchini out on in a single layer on the baking sheet. Roast 7 minutes. Turn zucchini over. Roast another 7-8 minutes, or until coating is crispy and golden brown. Serve immediately.

SO tasty that even Sean liked them…and he doesn’t do veggies!

I wear both–contacts for day, glasses for night. I desperatley want lasik–but I want an invisalign more right now. All in due time I suppose. I feel you on getting the eyes dilated–that totally sucks!

Your zucchini and squash chips remind me of my grandma’s fried zucchini and squash, but soooo much healthier!! I’ll have to try out this yummy recipe!!

I had an eye exam a couple of weeks ago – BLAHHHHHHHHHH!!!! Hate getting my eyes dilated. Wow, Sean liked a vegetable, you did good!!!

Well you know my story, I had lasik probably 9 years ago now and would do it all over tomorrow if I had to. I highly reccomend it.

Yummy on those chips. Yep, I wear contacts. I am a chicken about Lasik. The idea of surgery on my eyes??? Holy no.

The veggie chips look awesome! Right up my alley :) Great idea adding parm to the breadcrumbs!
I was prescribed contacts/glasses in 8th grade and stopped wearing wearing them when I started college…I never wore the glasses anyways and all the late nights, and traveling I did with the debate team made my contacts a huge hassle (I am super lazy…). Ever since then, every year when I get my eyes checked- they have IMPROVED!

Aww, sorry about the head. Headaches make me shut down, I can’t stand them! Hope it goes away soon. :-) I wear contacts and I feel your pain. I would love to get Lasik someday, too. When I’m rich.

Sorry about your eyes…I wore glasses from age 3 to age17 or 18. They told me I was at my adult vision and didn’t need glasses. I will need them again one day, though…but cute glasses are kinda fun!

The zucchini recipe looks delicious. I love it, but having it grilled gets boring after a while, so I’m always in search of a new way to prepare this delicious veggie.

I. Want. Lasik!!! I think that would top my list over any other sort of “cosmetic” surgery. Bec heck I wouldn’t be opposed to a boob lift after babies! LOL

I love zucchini and squash chips. Sadly neither one of my plants did very well this year so I don’t have the materials I did last year to work with. I really want to make these now. Off to the farmer’s market to get some.

I wear contacts most of the time, or glasses when I’m being lazy :) My eyes are pretty bad, and like yours, they get worse each time I get them checked. I would LOVE to get lasik someday. It would just be nice to wake up and not have to search around for my glasses!

i don’t wear contacts or glasses, but i really need to go to the eye doctor bc i have floaters. but i’m scarrrreddd of what they’re going to tell me! :( :(

I’ve never had my eyes dilated (I don’t think?) but I have had the glaucoma test with a puff of air or iodine drops. my old doc practically had to force my head down to even do the test, I have that bad of an eye phobia. and I’ve worn glasses/contacts since 2nd grade. lol.

what kind of contacts do you wear?

Love that dessert!
I wear glasses, but I like them. They’re a funner accessory than earrings or anything else. My boyfriend wants Lasik, but he has to wait because he had a scratch on his eye and they couldn’t do it when he wanted he has to wait at least a year before they’ll try to do it again. That scares me. What would’ve happened if they didn’t see the scratch? Yikes!
I don’t want Lasik, but I want my boobies done, like yesterday. I look like a 10 year old boy.

Lasik is the best invention out there!! I had it 7 years ago and I swear i’ve never seen so good. I use to wear the thick coke bottle glasses and contants…no more!

I wear glasses, but not all the time. Luckily, I only need them for reading/computer stuff – a slight astigmatism.

Zucchini and squash chips look delicious! I keep meaning to try those…and then I forget! I am starring the recipe to remind myself!

I wear contacts all the time and I have glasses for when I don’t feel like wearing my contacts. I’d like to get Lasik in the future. It would be great to be able to wake up in the middle of night and actually see my alarm clock without squinting.

Those zucchini look really good. I love roasting zucchini. I am going to have to try this recipe sometime. :)

I did get laser eye surgery done, and it was the best thing every. I used to wear contacts, but my eyes started rejecting them, and within just several minutes of having them in would be red and scratchy. At the time I hated glasses. They weren’t comfortable and I thought I looked horrible in whatever pair I had on (some of that was just not being comfortable with myself). My mom offered to get the surgery done for my birthday and Christmas presents that year (student discount special!). It’s amazing because right after they are done, you can see clearly, minus the initial fuzz of having your eyes lasered. I sucked the first night once the numbing drops wore off, but by the next day my vision was clear and all I felt was a twinge here and there and I still dont’ have to wear glasses. I think I might in the future, but I’ll be okay with it. I definitely recommend this surgery if it would help you. LOVE not having to wear anything on my eyeballs! :)

Those ‘chips’ turned out ‘prettier’ than mine! ;) …And it’s always a compliment to hear a guy that doesn’t like their veggies likes one of my recipes!

Great dessert as well! I love whipped cream on almost any dessert!

Ugh, sorry about your headache. :-( I wear contacts (have since I was 14) and REALLY hope I can get Lasik one day! My brother-in-law had Lasik last year and loved it. He was practically blind, not even joking LOL. His eyes are a bit dry from time to time, but otherwise he loves it!

I didn’t know you wore contacts. I’m blind too and have worn glasses since 1st grade. For some reason now though I can’t wear glasses for more than an hour because I feel like I can never see right out of them so it’s contacts every day. I want lasik but I’m scared because I know so many people who had terrible complications after their surgeries and it seems like a pain in the ass.

Those veggies look scrumptious. I bet they’d be good dipped into sweet chile sauce.

I’ve worn glasses and contacts since I was about nine years old. The glasses are only worn in the early morning and late evening now, as I wear contacts all day. Lasik still scares me, even though I know people who have had it done. I figure if my eyes are meant to be the way they are, I’ll just stick to glasses and contacts, since they’re really not a big deal. The only time that they’re a pain is when I go camping, and even then, they’re fine.

That zucchini looks delicious! I’ve worn glasses since I was 6 years old. I would never get Lasik… as amazing as it sounds to wake up in the morning and be able to see clearly, there is a slight risk of going blind from the surgery, and I just can’t bring myself to take the risk! It’s too scary.

I know what you mean about the eyes. I’ve had glasses forever and usually wear contacts. It’s almost time to get them checked out but I’m scared to because I KNOW they are worse. oy.

I’ve gotta give those zucchini and squash chips a try, Yum! I’ve been wearing contacts and glasses for about 10 years. I’ve considered lasik tho. My dad had it done and it worked out well for him!

I’m relatively useless without my glasses or contacts – I hate it! Several people in my family have had lasik and they LOVE it.

I just wear reading glasses but my sister wears both and is researching Lasik. My bf’s brother got it and he went from almost legally blind to 20/TEN vision! Incredible!!!

I had Lasik in January of 2009 and it was the best thing I ever did for myself. I was legally blind without contacts/glasses and I had worn contacts for over 20 years. My eyes were too the point where they couldn’t handle contacts anymore.

Don’t skimp on the surgery – you don’t want to shop for a sale on your eyes. Mine was $2000/eye. Totally worth it.
