Lately, I’ve been going back through old recipes that I’ve made that I enjoyed and re-posting them. I figure some people might see something they like.
This was a soup I made last winter and most definitely plan on making it again many times again this winter.
Turkey Minestrone
Ingredients
- 2/3 cup chopped onion
- 2 tablespoons vegetable oil
- 1/2 pound ground turkey
- 1/2 pound hot Italian turkey sausage links, casings removed
- 1/2 cup minced fresh parsley
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 (14.5 ounce) cans Italian stewed tomatoes
- 6 cups chicken broth
- 1 medium zucchini, sliced
- 1 (10 ounce) package frozen mixed vegetables
- 1 (16 ounce) can kidney beans, rinsed and drained
- 1 1/2 cups cooked elbow macaroni
- 2 tablespoons cider vinegar
- 1/2 teaspoon salt
- 1 pinch pepper
Directions
- In a large kettle over medium heat, saute onion in oil until tender, about 4 minutes. Add the next six ingredients; cook until meat is no longer pink. Add tomatoes, broth, zucchini and mixed vegetables; cover and cook on low heat for 5 minutes. Add beans, macaroni, vinegar, salt if desired and pepper; simmer for 3-4 minutes or until heated through.
Ok, I’m in the mood for some new soup recipes. I’d love to make a favorite of yours. Please post a link to your favorite soup recipe and I will choose a favorite and highlight your recipe in a future post!
Thanks guys!
This costume was so much fun! I printed out typical Magic 8 Ball Respondes—things like “it is decidely so” or “my sources say no” and put them in a ziploc bag that I pinned to my shirt. People would come and ask me questions, shake me, and then I’d pull out a response! This is such an easy last minute costume.
PS: Like my new hair? I’ve got bangs!
What were you for Halloween?
Truth be told, Halloween is not my favorite holiday. I don’t LOVE dressing up. Honestly, it sort of stresses me out. I don’t like trying to find a costume I like. There’s always too many choices and they are all too dang expensive. But, this year, I’ve been much more laid back about it and will be wearing two costumes—a recycled super fun creative idea for a costume and a semi-sexy cop
.
However, I did love trick or treating when I was little. It’s a shame that kids don’t really get to trick or treat the way we used to. It seems like nobody goes house to house anymore.
My most memorable Halloween was when I was little. I’m not sure what I was dressed as, but I went up to a door and a woman dressed up as the witch from Snow White answered the door. She cackled, offered me an apple and I screamed and ran away. My mom forced me to go back up to the door and get candy. I’m pretty sure the woman felt horrible!
So, here are some of the costumes I found pictures of over the years.
My first Halloween
Not sure what I am…definitely don’t look too happy to be in it though
Minnie Mouse. Wish this was a better picture!
Blue M & M
What were some of your favorite Halloween costumes? I’ve also been a Southern Belle. I think my FAVORITE costume was my costume from Freshman year of college. I was a magic 8 ball. I wore all black and put a big 8 in a circle on my chest. I printed out typical magical 8 ball responses like “my sources say no” or “signs point to yes” and cut them into little pieces and put them in a baggie that I pinned behind my 8. I’d have people come up to me, ask me a question, and then shake me and I’d pull out an answer for them. I can’t tell you how many guys asked “Am I going to laid tonight?” No matter what I pulled out, I’d always say NO
. Stupid boys.I wish I had a picture of that costume, but I guess I never took one! I will probably do that costume again this year.
