A dinner fit for kids

by Lisa on January 18, 2011 · 40 comments

I’m in denial. Tonight is the first night I’ve opened up my Microbiology notes. I guess I was in denial that I’ve actually been in a class.

“You mean, I have to study?! Do work?”

Unfortunately, yes. Major fail.

So, because of that, this post will be short.

Tonight’s dinner was easy-peasy. Dinner fit for a kid! Sloppy joes. Seriously, these things never get old. I always wing it when I make sloppy joes. Tonight, I decided to follow an actual recipe to see how they turned out.

Sloppy Joe’s

32 oz extra lean ground turkey
    1/2 tsp ground black pepper
    1 medium red onion, chopped
16 oz no added salt tomato sauce
    1 cup ketchup
    1/2 cup BBQ sauce
    2 tsp chili powder
    Dash of hot pepper sauce
    4 Wheat Buns
In a large skillet, combine ground turkey, black pepper and onion. Cook over medium heat, stirring occasionally until the turkey is no longer pink.

Stir in tomato sauce, ketchup, bbq sauce, chili powder and hot pepper sauce. Simmer for about 10 minutes over low heat, stirring occasionally, until mixture has thickened.

    Sevre open face on bun.

    Number of Servings: 4

I got this recipe from the Eating for Life cookbook (endorsed by the Body for Life program). If you are a newbie to healthy eating, this is a great starter cookbook. Nothing too crazy, just simple easy and healthy recipes.

I paired my sloppy joe with asparagus roasted in olive oil and lemon pepper seasoning.

Simple and delicious!

I’m off to rewrite my Micro notes. Hooray for me. I know you’re jealous.

What’s one of your go to healthy meals?

Do you have a favorite cookbook or recipe magazine?

What do you think of Biggest Loser this year (new trainers, etc)?

Maybe I’m just slow to adapt but I don’t love the new trainers. I  hate them being split up with seperate way ins. I hate the two campuses. Bleh. I’m still watching though.

I think this should also be titled “a dinner fit for husbands.” At least in my case!

Sloppy Joe’s definitely remind me of being a kid! We probably had them once a week. For quick dinners, I love to make black bean burritos or stir-fry of some sort. I don’t watch the Biggest Loser. Does that make me a loser? ;) Good luck with your studying!!

I love my church’s cookbook. It’s filled with authentic Greek recipes. My favorite go-to healthy meal is a spinach salad filled with a ton of veggies or a veggie rice bowl. Yummy!

My go to healthy meal is Sesame Beef Stir Fry or Amerian Turkey Goulash from Eating for life – Love that cook book.

I didn’t get to watch tonight, did they show them?

I hated sloppy joe’s growing up. With a passion.

My go-to healthy meal is a veggie stir fry. I probably eat that 5 times a week for dinner. Booorrrring.

mmm, these look GOOD. yum.

I have many quinoa dishes – burgers and bowls – that are my healthy and quick go to meals.

I loved micro… in college, I had an internship at a microbiology lab and it was FUN… I felt like I was playing!

oh… and I’m still watching BL (watching right now!) but I’m not really into it the last few seasons… I hate that tonight they were saying 4 lb loss is BAD, because that guy could go home for it. I understand what Bob was saying, because he NEEDS to stay, but because of all the stupid rules and gameplay, 4 lbs is negative.

Wahhh (that’s the sound of me crying) I can totally relate! I, too, have not been doing as much school work as I should… and that is why I am still awake at almost 2am. Oops? Takes a while to get back into the swing of things, I guess!

I think I like eating like a kid. And as a kid (and as an adult), I cant get enough sloppy joes.
I often need recipes being a private chef. the family I work for doesnt want to be bored. I usually browse foodgawker or my mark bittman cookbook.
I usually have tuna salad as my go to healthy meal. I make it with avocado instead of mayo with plenty of mustard and pickles.

A go-to lunch for me is veggies and hummus and I try to keep sweet potatoes and veggies for roasting on hand for a quick and painless dinner.

If you’ve ever read my blog, you know I’m obsessed with Cooking Light magazine!

This looks good! I like sloppy joes. I’ve only made them one time but I keep thinking about them. I’m going to have to make it sometime next week. Yum!

I’m a few episodes behind on the Biggest Loser. I don’t like that they are splitting them up into different campuses. I liked the show how it was.

Hmmm Sloppy Jose`?! Sounds good to me! I like allrecipes.com you can type in which ingredients you have & it finds all recipes that have exactly that. Our fridge was practically empty and I jokingly typed in checken & mustard and found this:

and it was great! Thanks for the sloppy joe recipe.

Sloppy Joes! I love them soo much! Ready? I went to a friend’s house and she called it a Manwich! NO! It’s a Sloppy Joe! I can’t let it be called something else. I love the healthy twist to it! I google all recipes, I need to start making my own collection of them.

One of my go-to healthy meals is homemade enchiladas. In fact, we’ve had them the last two nights in a row!

My favorite cookbook is Eat Drink and Be Vegan. It has awesome meals and desserts – I’ve dog eared more pages than I can count!

I’m watching Biggest Loser, but I DVR it, and I just watched the first episode last night. The only thing I can say about the new trainers is that I’m still really annoyed that they haven’t shown their faces yet. What gives?!

Sloppy Joes are just so freaking awesome. I know what I am going to insist my Mom makes this weekend haha.

Favorite healthy go-to? Spaghetti squash with pesto and pine nuts. I can live off that stuff for a week, solid.

Is it strange that my mom never made sloppy joes for my brother and I? I don’t get it…

Google is my friend when it comes to recipes and such. I have a cookbook that my friend made. I keep adding recipes to it. But being as how I don’t repeat recipes often, it’s kind of pointless. Meh.

You’re not going to believe this, but I don’t think I’ve EVER eaten a Sloppy Joe!! I think it’s about time that I change that!

I completely understand the school denial thing. I had to CRAM to get assignments done for my second week of classes because I didn’t do any work over the weekend. After being out of school for 2.5 years, it’s really hard to get back into study-mode!

My go-to (super cheap!) healthy meal usually involves eggs, cheese and veggies prepared in various ways. My favorite cooking magazine is Cooking Light! I’ve been subscribing since I was in 7th grade!
