Tomato Soup with White Beans and Pasta

I’ve been on such a soup kick. Literally, I want to make every single soup I see.

Unfortunately, I usually only make about one batch of soup a week and then munch on it throughout the week.

I’ve even had soup for breakfast.

It’s that good.

I saw this recipe in All You magazine and knew that it would be the recipe o’ the week.

Tomato Soup with White Beans and Pasta

Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: Serves 4
Cost per Serving: $1.68

Ingredients

  • 2  tablespoons  olive oil
  • 2  cloves garlic, finely chopped
  • 1/4  teaspoon  dried oregano
  • 2  15-oz. cans diced tomatoes
  • 28  ounces  low-sodium chicken broth
  • 1/2  cup  tubetini, elbow macaroni or other small pasta
  • 1  15-oz. can cannellini beans, drained and rinsed
  • Salt and pepper
  • 2  tablespoons  finely chopped fresh parsley

Preparation

1. Warm oil in a large saucepan over medium-high heat. Add garlic and cook, stirring frequently, until fragrant, about 1 minute. Add oregano, stir once, then add tomatoes with juice and chicken broth. Bring to a boil.

2. Add pasta, stir, and cook until just tender, about 8 minutes. Stir in beans, lower heat and simmer until warmed through, about 5 minutes. Season with salt and pepper, stir in parsley and serve, drizzling each portion with additional olive oil if desired.

Simple? Check.

Cheap? Check.

Healthy? Check.

Filing? Check.

I attempted my very own batch of homemade soup this weekend and I’m hooked! I’ve already made more the past few days, but usually in batches fit for one biiiig serving!

Today’s was a random mix of sauteed onion, zucc, tomato, garlic and carrots + lentils + veggie broth + chili flakes, curry and peppa! So so good. That soup sounds amazing though too! Kind of like minestrone?? :)

That soup looks great! I swear that I could easily just eat soups and stews and be completely content. A few days ago I made a stew and ended up eating it for breakfast the next day and I’m not usually a savory breakfast person.

I LOVE soup…and often make and freeze it. This sounds like an awesome and super easy recipe and I have all the ingredients on hand, except I’ll have to sub in some veggie broth=) This is being made this week for sure!

Love it! This is a lot like a pasta fagioli recipe I make – I just heart that you don’t have to cook the noodles separately – they go right in!! Great recipe – I plan to try your variation!!!

I’ve been making soup recently too, mainly because I realized how easy it is! And also because I somehow have ingredients to make soup and only soup!

Wow I totally need to catch up on my blog reading. I totally know what you mean about being uncertain about your life. the “uncertain” is something that many people fear. Sometimes, the unknown is even scarier than the negative “knowns” in our lives. Anyhow, you know I’m here if you need to bitch it out or a cyber hug.
