Do I even need an introduction for Julie? I think all of you know how wonderful she is. I met her quite a while ago (before we even blogged) and I’ve been happy to be friends with her since.
Enjoy her guest post about her favorite slow cooker meals (you can bet your butt I’ll be utilizing some of these!)
Hi I’m an Okie Fans! My name is Julie and I am the author behind the blog Peanut Butter Fingers which follows my life as I try to exercise regularly and eat (mostly) healthy foods while working and having fun with my husband and our insane dog.
I have “known” Lisa for about two years now through the lovely internet and was honored when she reached out to me to do a guest post on her blog!
Lisa’s blog is one I read daily because I find her so relatable, approachable, honest and real. She writes in a way that makes me feel like I am reading an email from my best friend. Since Lisa began nursing school, I know she has a ton on her plate and thinking about preparing healthy meals can be hard when your schedule is full.
When I find my calendar jam-packed, I try not to succumb to take out every night and focus on making healthy, yet simple meals.
This often means I’ll use my crock pot! I absolutely love my crock pot because it allows me to throw everything in to the slow cooker and let it do the cooking for me all day long. Then, when it’s dinner time, all I have to do is scoop out the meal and enjoy. Simple!
Since I know many of us are spread too thin, I figured you guys might enjoy one of my all-time favorite go-to slow cooker meals…
Honestly, this is the easiest meal in the world because you only need two ingredients:
- 1 can chicken broth
- 2 chicken breasts
Simply place the chicken breasts in the crock pot, cover with the chicken broth and cook on low for six hours! (The cook time can vary from four to eight hours, but I generally prefer six.)
Then, remove the chicken breasts from the crock pot and shred with two forks.
That’s it!
Afterward you can top the shredded chicken with whatever toppings you wish and make a variety of different meals like:
- Tacos
- Chicken salad
- Pasta with chicken and veggies

I have tried pulled chicken – it is great and you can use it for so many things.

I completely forgot about my slow cooker! I remember all the fantasies I had of delicious meals I was going to make in that thing. I think I’ll have to dig it out and test out some vegan recipes.
EEEEkkk!! I love my slow cooker I just forget about it so often. I really need to jump on the pulled chicken bandwagon!!

I made pulled chicken last night and topped it with BBQ sauce once shredded. Don’t put the bbq sauce in the crock pot..the sugar will burn up!
The crock pot always makes me evenings more peaceful!
