Shrimp Scampi (Eating for Life Cookbook)
Shrimp Scampi
Serves: 2
INGREDIENTS:
2 portions whole wheat penne pasta (about 4 oz uncooked) —I used Carbanada Noodles
-1 tbsp Olive Oil
-3 cloves garlic, minced
-2 portions raw shrimp, peeled and deveined
-3 tbps butter buds (i used light butter)
- 3 tbsp white wine (or chicken broth)
1/4 tsp black pepper
1 lemon, halved
3 tbsp reduced fat parmesan cheese
2 tbsps fresh parsley, chopped
DIRECTIONS
- Prepare pasta according to package.
- While pasta is cooking, heat olive oil and garlic in a wok or large skillet over medium heat.
- Add shrimp to the skillet and cook, stirring frequently, until its almost pink, about 2 minutes.
- Add 1 tbsp butter buds and white wine to shrimp, saute about 2 more minutes.
- Place cooked pasta in large mixing bowl and combine it with remainder of butter buds and black pepper; mix gently.
- Add cooked shrimp to pasta and gently mix all together.
- Divide into two portions and spoon onto plates. Top with a squeeze of lemon, parmesean cheese, and fresh parsley!
