Spanish Omelette

From: Eating for Life Cookbook

Ingredients:

1 whole egg
3 egg whites
1 tbsp skim milk
1/4 tsp chili powder
1/8 tsp ground cumin
1/8 black pepper
1 slice cheese
1/4 cup Salsa
(I also added spinach)

DIRECTIONS:

1. In a small whisking bowl, mix together eggs, egg whites, and skim milk. Add chili powder, ground cumin, black pepper; blend well.

2. Lightly coat a medium nonstick skillet with cooking spray and place over medium heat. Add egg mixture to skillet. As eggs begin to set, run a spatula over the edge of the skillet, lifting set eggs so uncooked eggs run underneath.

3. When the eggs are set but still moist, add cheese to one side of the omelette, and add salsa on top. Fold omelette over filling and cook until cheese melts.

This looks great. But, I’m wondering what you think about not adding the skim milk? I cant tolerate milk and dairy for that matter, like the cheese because of this digestive problem I got, but do you think it would mess it all up if you left out the milk and cheese?
I hope not, because it looks awesome.
nice site too, its been a few years since I was in Oklahoma, but for sure some good people out that way, and some small dinosaur looking armadillios on the side of the road I remember… good times.

I think it would be just fine without the milk! I make eggs all the time without the milk–this recipe just called for it so I did it.
